Step 1

Mix the spice rub. Cut the pork into large chunks and season liberally with the spice mixture. Let the pork sit for 1 hour. 

Step 2

Sear the pork in neutral oil until it's browned all over. You may need to do this in batches. 

Step 3

Add onions to the pot and cook until browned. Deglaze with bourbon and the braising liquid. 

Step 4

Add the pork back to the pot and toss well. Cover and transfer to the oven for 2.5 hours. Then, uncover and cook til tender. 

Step 5

Pour in the rest of the braising liquid and simmer on the stove til thickened.
