Italian Meatball Soup

Ingredients

Step 1

In a large mixing bowl, combine the breadcrumbs, egg, and milk and let the mixture sit for 5-10 min. 

Step 2

Mix in the remaining ingredients by hand until the mixture is just combined. Don't over-mix!

Step 3

Use a cookie scoop to portion out the meatballs, then broil for 6-8 minutes. 

Step 4

Heat olive oil in a dutch oven and saute the veggies. Add in the tomato paste and spices. 

Step 5

Add the broth and bring to simmer. Add the meatballs to the soup and simmer for 15-20 minutes. 

Step 6

Add the pasta to the soup and cook until just al dente. Season to taste with salt and pepper and add the basil. 

Step 7

Ladle the soup into bowls and drizzle with good olive oil. Top with parmesan and fresh basil.
