Step 1

Truss the tenderloin and season liberally. Let it come to room temperature. 

Step 2

Mix the butter with the herbs, garlic, and dijon and pepper until smooth. 

Step 3

Use a hot pan to sear the beef tenderloin on all sides until browned. 

Step 4

Spread the butter all over the tenderloin and transfer to the oven until it reaches 130 F internal temperature.

Step 5

Make a pan sauce with red wine, shallots, butter, and madeira.
