Saute the shallot in butter in a large skillet. Add the thyme and flour and cook for 3-4 minutes.
Slowly whisk in the half and half and dijon and bring to a simmer until thick.
Remove the sauce from the heat and stir in the shredded cheese until melted.
Stir in the cooked, al dente pasta into the cheese sauce and toss well. Season to taste with salt and pepper.
Spread the mac and cheese into a baking dish and top with buttered bread crumbs.
Bake for about 30 minutes, until the top is browned and the cheesy sauce is bubbly.
