Step 1

Make the compote.  Combine the ingredients in a small saucepan and simmer until the cranberries are soft and syrupy. 

Step 2

Mix the batter.  Add the ingredients to a blender carafe and blend until very smooth. 

Step 3

Preheat the skillet.  Place the oven in the skillet to preheat. Once hot, melt the butter and swirl to coat. 

Step 4

Pour the batter.  Once the skillet is hot and the butter is melted, pour the batter into the skillet and transfer to the oven.

Step 5

Bake.  Bake until puffy and golden brown. Top with cranberry compote, whipped cream, and powdered sugar.
