Step 1

Brown the meat.  Heat oil and in a skillet and brown the sausage. Towards the end, add the peppers and onions.

Step 2

Mix the filling.  Mix the sausage with the cream cheese, cheese, green onions, and spices. Set aside. 

Step 3

Beat the eggs.  In a blender or mixing bowl, whisk the eggs with half and half, dijon, hot sauce, salt and pepper. 

Step 4

Assemble.  Divide the sausage mixture between croissants, pour the egg in, top with seasoning and more cheese.  

Step 5

Bake.  Let the mixture soak for 1 hour at least, then bake covered and then uncovered until golden brown.
