1. Get a Good Sear

Season your pork chops with salt and pepper and heat a bit of oil in a large skillet. Cook 4-5 minutes per side, until browned.

2. Blister the Tomatoes

Remove the pork from the pan, add some butter and the tomatoes, onion and garlic. Cook until the tomatoes are soft.

3. Wilt the Spinach

Add white wine to the tomatoes and reduce until almost dry. Add the spinach and cook until wilted.

4. Build the Sauce

Add the cream, chicken broth, and parmesan and stir until combined. Season the sauce to taste with salt and freshly cracked pepper.

5. Finish in the Oven

Return pork to the pan and transfer to the oven at 400 F for 25 min, until the pork is cooked through and tender. Rest 10 minutes before serving.

Done!
