Step 1

Saute the veggies.  Melt butter in a dutch oven and add the veggies and garlic. Saute until softened. 

Step 2

Make the roux.  Add the dijon and flour and stir well. Stir in the white wine and broth and bring to a simmer. 

Step 3

Simmer the soup.  Add the diced ham and potatoes to the soup and simmer until the potatoes are tender. 

Step 4

Finish the soup.  Once the potatoes are tender, stir in the cream and fresh herbs and season with salt and pepper.
