Cranberry Cheesecake Bars

Cranberry cheesecake bars are the perfect easy holiday dessert recipe! These cheesecake bars are creamy and light and can be made ahead of time.

1. Cookie Crumbs

Pulse gingersnap cookies in a food processor until you have fine cookie crumbs. 

2. Mix Crust

Combine the cookie crumbs with melted butter, sugar, and a pinch of salt and mix until it's the texture of wet sand. 

3. Bake Crust

Press the crust into an 8x8" baking pan and bake at 350 F for 10 minutes. Cool to room temperature.

4.  Cranberry Topping

Combine cranberries, sugar, water, and Grand Marnier in a saucepan and cook until very thick. Cool to room temperature. 

5. Filling

Combine cream cheese, sugar, eggs, sour cream, vanilla, and Grand Marnier and mix until smooth. 

6. Assemble

Pour the filling into the prepared crust and dollop the cranberry sauce on top. 

7. Swirl and Bake

Gently swirl the cranberry into the filling using a toothpick or chopstick and bake at 300 F for 35 minutes. 


Chill at least 4 hours before cutting into squares. These can be made 3 days in advance or frozen for 3 months.
