Classic Chicken Noodle Soup

A truly homemade, from-scratch chicken noodle soup recipe.

Step 1

Make the stock. Break the whole chicken down into pieces, season with salt and pepper, place in a stock pot with the remaining ingredients.

Step 2

Skim. Cover with water, simmer, and skim any foam. Remove the chicken, shred it, and return the bones to the pot. Simmer for 2 hours. 

Step 3

Saute the veggies.  Saute the carrot, onion, and celery in butter in a dutch oven until softened. Season with salt and pepper. 

Step 4

Add the stock and chicken. Strain the stock and then add it to the pot with the shredded chicken. Simmer. 

Step 5

Finish the soup. Add the peas and dill and cook til tender. Cook the noodles separately.

Step 6

Serve. Ladle the soup into bowls with the noodles. Serve with a drizzle of olive oil and more fresh dill.
