Step 1

Whisk together the creamy sauce and season with salt and pepper. Fold in all the cheeses. 

Step 2

Thinly slice the potatoes on a mandoline and toss really well to coat with the cream and cheese mixture. 

Step 3

Layer the potatoes in a prepared casserole dish, edges out. Pour the cream sauce over. 

Step 4

Wrap the potato gratin tightly with foil and bake covered, then uncovered. 

Step 5

Top with more shredded cheese and continue baking until golden brown.
