In a mixing bowl, toss the chicken with corn starch, salt and pepper, until well-coated.
Heat oil over medium heat in a large wok. Once the oil is hot, add the cashews and cook til golden brown.
Remove the cashews and increase the heat. Fry the chicken until it's golden brown all over.
Remove the chicken and add the garlic and serrano and cook for 2 minutes, until fragrant.
Add the veggies and cook til soft
. Add the chicken and cashews with the sauce and cook until thick.
