Cashew Chicken

An easy one-pan, 30 minute dinner recipe!

Ingredients

Step 1

Season chicken.  In a mixing bowl, toss the chicken with corn starch, salt and pepper, until well-coated.  

Step 2

Fry cashews. Heat oil over medium heat in a large wok. Once the oil is hot, add the cashews and cook til golden brown.

Step 3

Fry chicken.  Remove the cashews and increase the heat. Fry the chicken until it's golden brown all over. 

Step 4

Cook aromatics.  Remove the chicken and add the garlic and serrano and cook for 2 minutes, until fragrant. 

Step 5

Finish. Add the veggies and cook til soft. Add the chicken and cashews with the sauce and cook until thick.
