Step 1

Make the brulee topping.  Melt sugar over medium heat, stirring occasionally until the sugar is melted and deep amber in color. 

Step 2

Set and break.  Pour the melted sugar onto a parchment lined baking sheet. Sprinkle with flaky salt. Once set, break into small shards. 

Step 3

Pull the espresso shots.  Measure espresso into the portafilter. Pull a double shot of espresso. Pour into a mug and stir in caramel sauce. 

Step 4

Finish.  Pour vanilla steamed milk into the espresso and top with whipped cream, caramel, and brulee topping.
