An easy one-pot vegetarian or vegan bean soup recipe!

Step 1

Saute the sofrito. Sofrito is a mix of onion, peppers, and garlic! Saute in olive oil until softened and starting to brown.  

Step 2

Add the spices. Add the spices and chopped chipotle peppers and cook for 4-5 minutes, stirring often, until fragrant, 

Step 3

Add the beans.  Add the broth, soaked beans, bouillon, and bay lift and simmer until the beans are tender and creamy. Add a little vinegar towards the end.

Step 4

Blend the soup. Season the soup to taste and then use an immersion blender to blend the soup to your desired consistency,
