Ingredients

Step 1

Liberally season the short ribs with salt and pepper. Sear them in a dutch oven with a bit of oil until browned all over. 

Step 2

Add in some butter and saute the mirepoix and garlic until browned. 

Step 3

Add the tomato paste and flour to the veggies and cook, stirring often, for 4-5 minutes.

Step 4

Pour in the braising liquid and bring to a simmer. Add the short ribs and herbs. Cover and transfer to the oven.

Step 5

Braise for 3-1/2 hours, until the short ribs are tender. Let them rest before serving over mashed potatoes.
