This Korean-inspired Beef Ramen Noodle Soup has tender braised beef, kimchi, noodles, and eggs in a flavorful beef ramen broth. The whole recipe comes together in one pot, too!

Sear the beef.
Remove the bones and set aside. Cut beef into cubes and sear in a hot pot with oil until browned. Remove and set aside.
Add the onions, garlic, and ginger to the pot. Then add the gochujang paste and cook for 3-4 min.
Return beef to the pot.
Add the beef back to the pot along with the bones and broth and bring to a simmer.
Cover and simmer on the stove until the beef is very tender. Shred the beef and season the broth accordingly.
Cook the noodles.
You can cook the noodles separately or directly in the ramen broth!
Top and serve.
Ladle soup and noodles into bowls and top with eggs, kimchi, and green onions.
