Beef Ramen Soup

Step 1

Sear the beef.  Remove the bones and set aside. Cut beef into cubes and sear in a hot pot with oil until browned. Remove and set aside. 

Step 2

Saute aromatics. Add the onions, garlic, and ginger to the pot. Then add the gochujang paste and cook for 3-4 min.  

Step 3

Return beef to the pot.  Add the beef back to the pot along with the bones and broth and bring to a simmer.   

Step 4

Simmer.  Cover and simmer on the stove until the beef is very tender. Shred the beef and season the broth accordingly.  

Step 5

Cook the noodles.  You can cook the noodles separately or directly in the ramen broth!

Step 6

Top and serve.  Ladle soup and noodles into bowls and top with eggs, kimchi, and green onions.
