Step 1

Mix the beef. Combine the beef, onion, garlic, spices, lemon, and fresh herbs and mix by hand until just combined. Don't overmix!

Step 2

Form the kebabs. Take about 1/3 cup of the beef mixture, form it into a log and press the skewer into it and seal the meat around it. 

Step 3

Grill kebabs. Grill the kebabs for 4-5 minutes per side, until cooked through but not overcooked.  

Step 4

Make dressing.  Combine the yogurt sauce ingredients in a food processor and process until smooth. 

Step 5

Serve. Arrange the kebabs on a platter with fresh veggies, herbs, lemon wedges, and herby yogurt sauce.
