Cut beef into chunks and season well. Sear in a dutch oven with hot oil until browned on all sides.
Remove the beef and then saute the lemongrass, lime leaves, ginger, garlic, and curry paste.
Make the sauce.
Once the aromatics are fragrant, add the coconut milk, sugar and fish sauce.
Season the sauce with salt and pepper and add the beef and veggies. Transfer to the oven and braise until tender.
Serve over steamed rice with fresh herbs, lime, and chili oil.
