Beef Coconut Curry

Step 1

Sear beef.  Cut beef into chunks and season well. Sear in a dutch oven with hot oil until browned on all sides.

Step 2

Saute aromatics. Remove the beef and then saute the lemongrass, lime leaves, ginger, garlic, and curry paste. 

Step 3

Make the sauce. Once the aromatics are fragrant, add the coconut milk, sugar and fish sauce. 

Step 4

Braise.  Season the sauce with salt and pepper and add the beef and veggies. Transfer to the oven and braise until tender. 

Step 5

Serve. Serve over steamed rice with fresh herbs, lime, and chili oil.
