Ingredients

Step 1

Render the bacon.  Cook the bacon in a dutch oven over medium-low heat until browned. Remove from the pot. 

Step 2

Sear the beef.  Season the beef with salt and pepper and sear on all sides in the bacon fat until browned. Remove from the pot.  

Step 3

Saute the veggies.  Add butter and the veggies to the pot. Cook until soft. Then add tomato paste and flour and cook 2-3 minutes.  

Step 4

Prepare for the oven.  Add the wine and broth and simmer. Add the beef, bacon, and herbs to the pot and transfer to the oven.

Step 5

Saute mushrooms.  Towards the end of braising, cook the mushrooms in butter til browned. Add the pearl onions and cook until browned. 

Step 6

Finish.  Continue braising in the oven until the beef is very tender. Season to taste and serve over mashed potatoes!
