Render the bacon.
Cook the bacon in a dutch oven over medium-low heat until browned. Remove from the pot.
Sear the beef.
Season the beef with salt and pepper and sear on all sides in the bacon fat until browned. Remove from the pot.
Saute the veggies.
Add butter and the veggies to the pot. Cook until soft. Then add tomato paste and flour and cook 2-3 minutes.
Prepare for the oven.
Add the wine and broth and simmer. Add the beef, bacon, and herbs to the pot and transfer to the oven.
Towards the end of braising, cook the mushrooms in butter til browned. Add the pearl onions and cook until browned.
Continue braising in the oven until the beef is very tender. Season to taste and serve over mashed potatoes!
