Step 1

Lay the slices of brioche out on a tray overnight so they become stale. This helps them absorb the custard without falling apart. 

Step 2

Blend the custard and pour it into a shallow dish. Dip the pieces of stale brioche in the custard until soaked. 

Step 3

Arrange the bread in a baking dish and top with the remaining custard. Cover and refrigerate for 1 hour.

Step 4

Remove from the fridge, top with diced butter, and bake until golden brown and puffy.

Step 5

while the french toast bakes, sauté the bananas in melted butter and add the brown sugar, rum, and heavy cream.

Step 6

Top the french toast with the banana sauce, pecans, and whipped cream before serving.
