1. Prep Chicken

Spatchcocking your chicken helps it cook quickly and evenly. Click the link below for a video tutorial.

2. Make Marinade

Put all the ingredients for the marinade in a food processor or blender and blend until smooth.  

3. Marinate

Pour the marinade over the chicken and really work it into the chicken. Cover and refrigerate for at least 4 hours, up to 24 hours. 

4. Grill Chicken

Prep your grill for indirect heat cooking (more info at the link below!). Grill the chicken skin-side down over direct heat, then transfer to indirect heat and grill for 1 hour.

Done!

Rest 10 minutes before slicing. Serve with warm tortillas, salsa, limes, and cilantro.
