Mix the meatballs.
Combine the meatball ingredients in a mixing bowl and mix by hand until
mixed. Mixing by hand is always best!
Use a scoop to evenly portion the meat, roll into balls, lay on a baking sheet, and broil until browned.
Roast tomatoes and garlic until soft and then blend with chile de arbol until smooth.
Cook the tomato mix.
Saute the onion and tomato mixture in olive oil for 3-4 minutes until thickened.
Add broth and veggies.
Add the broth, meatballs, carrots, and potatoes and simmer until the potatoes are soft.
Add the green veggies and simmer just until softened. Stir in cilantro and season with salt and pepper.
