Albondigas Soup (Mexican Meatball Soup)

A simple, delicious, and healthy Mexican soup recipe.

Step 1

Mix the meatballs. Combine the meatball ingredients in a mixing bowl and mix by hand until just mixed. Mixing by hand is always best!

Step 2

Portion meatballs. Use a scoop to evenly portion the meat, roll into balls, lay on a baking sheet, and broil until browned. 

Step 3

Roast tomatoes. Roast tomatoes and garlic until soft and then blend with chile de arbol until smooth. 

Step 4

Cook the tomato mix. Saute the onion and tomato mixture in olive oil for 3-4 minutes until thickened. 

Step 5

Add broth and veggies.  Add the broth, meatballs, carrots, and potatoes and simmer until the potatoes are soft. 

Step 6

Finish soup.  Add the green veggies and simmer just until softened. Stir in cilantro and season with salt and pepper.
