Easy Spam Fried Rice

Spam fried rice is one of my favorite quick-and-easy weeknight dinner recipes. It’s a great meal to clean out your fridge with! I happened to have some green beans on hand but chopped broccoli, green peas, corn, squash, etc would all be welcome additions. The best part? This meal is on the table in 20 minutes!

I love how easy this recipe for spam fried rice is! You can customize with your favorite veggies or whatever you have on-hand.

  • Day-Old Rice
  • Eggs
  • Garlic
  • Ginger
  • Scallions
  • Veggies
  • Soy Sauce
  • Dark Soy
  • Fish Sauce
  • Sesame Oil
  • Mirin
  • Japanese Mayo
  • Furikake

Why use ‘day-old’ rice in fried rice?

It’s important to use leftover or day-old rice for fried rice because it’s had a chance to dry out a bit and therefore will cook and absorb sauce without becoming overcooked and mushy. If you use fresh rice for fried rice, it will still taste great but the texture will be too soft to really be enjoyable.

If you don’t have leftover rice, steam your rice according to your rice cooker’s instructions and then spread it out on a baking sheet in the fridge for an hour or two to dry it out a bit.

Spam Fried Rice

I love a good fried rice! It's perfect for a quick weeknight meal and for cleaning out the random contents of my vegetable drawers. This spam fried rice is full of flavor and texture.

Makes: 4 servings

Ingredients

Fried Rice

  • 1 tablespoon neutral oil
  • 12 oz low sodium spam cut into 1/2 inch cubes
  • 4 cloves garlic minced
  • 1/2 yellow onion diced
  • 2 carrots peeled and finely diced
  • 1 cup chopped french green beans fresh
  • 1 bunch green onions white/light green and dark green parts separated and sliced
  • 2 eggs lightly beaten
  • 4 cups day-old cooked long grain white rice
  • Japanese mayo Kewpie
  • 2 tablespoons furikake

Sauce

  • 1/3 cup soy sauce
  • 2 teaspoons dark soy
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil
  • 2 teaspoon grated ginger
  • 1 tablespoon mirin
  • 1 teaspoon fish sauce

Instructions

  • Heat a large nonstick wok or skillet pan over medium heat.
  • In a small bowl, whisk together ingredients for sauce and set aside.
  • Add oil to the pan and then the cubed spam. Cook, stirring occasionally, until spam is caramelized. Remove the spam from the pan and set aside. You can add a little more oil if necessary.
  • Add the yellow onion, white/light green parts of the green onion, garlic, and carrots to the pan and cook for 2-3 minutes, until carrots are slightly softened. Then, add the green beans and cook for 2-3 minutes, until bright green.
  • Move all the veggies to one side of the pan and pour the eggs into the exposed side. Allow the eggs to cook completely and then use a wooden spoon to break the egg up into pieces. Add the rice and spam to the pan and mix everything together.
  • Pour the sauce into the pan and cook, stirring frequently, until the sauce is absorbed into the rice. Season to taste with salt and pepper. Transfer to a serving dish and drizzle with the Japanese mayo and sprinkle with the furikake and the green onion tops.
