Instant Pot Refried Beans

Everyone loves restaurant quality refried beans and thanks to the Instant Pot, you can make them so easily. This recipe is gluten-free and can easily be adapted to vegetarian or vegan.

Add the beans, onion, spices, bay leaf, jalapeño, and salt to the Instant Pot.

Add the chicken stock or water and stir well. Lock the lid in place and cook on high presesure for 45 min. 

Allow for natural pressure release. Use a spoon to remove the excess liquid and set aside. 

Add the lard and use an immersion blender to blend until smooth, adding liquid as necessary. Season to taste with salt. 

Done!
