Small Batch Strawberry Crisp for Two

Description

This super easy recipe only requires a handful of ingredients and is the perfect dessert for two!


Ingredients

Crisp Topping:
1/3 cup old fashioned oats
1/4 cup + 1 tablespoon all purpose flour
1/4 cup brown sugar
2 tablespoons unsalted butter, melted
pinch of kosher salt

Filling:
16 oz strawberries, tops removed and cut in half
1/3 cup granulated sugar
1 teaspoon freshly grated ginger
2 teaspoons vanilla extract
1 1/2 teaspoons corn starch


Instructions

1. Preheat an oven to 350 degrees F.
2. To make the crisp topping: in a small bowl, mix all ingredients together with a fork until all the ingredients are well mixed. Place in the fridge while preparing the filling.
3. In a small bowl, toss all the filling ingredients together. Lightly grease a small baking dish (mine was about 6 inches in diameter, about 2 inches deep). Pour the filling and all the juices in the baking dish and top with the chilled crisp topping. Place the baking dish on a baking sheet to catch any overflow and place in the oven. Bake for 40-45 minutes until the topping is golden brown and the filling is bubbling. Allow to cool on a rack for 15-20 minutes before serving.
4. Top with a scoop of ice cream!
